For some reason, I have a lot of difficulty making a good pizza dough. Basically it's bread, of course, but what else do you put in? Some put in salt, some olive oil, some nothing. This is a work in progress which will continue to change until I'm happy with the results.

Ingredients

250 g       500 g       Wheat bread flour
8 g       16 g       Yeast
167 ml       334 ml       Water at 37°
20 ml       40 ml       Olive oil
8 g       16 g       Salt

Start at least 3¼ hours before serving.

  1. Mix the ingredients in a mixer. This will take about 15 minutes.

  2. Allow to rise in an oven at 40° for at least an hour, maybe 1¼ hours. I find that I get the correct temperature in my oven if I turn it on with the thermostat set to “off”. Total time: 1½ hours.

  3. Mix the dough again in the mixer and then roll it out to shape on the plates with baking paper underneath, about 10 minutes. Total time: 1 hour, 40 minutes.

  4. Let it rise again for up to an hour. Total time: 2½ hours.

  5. Pre-bake for 10 minutes from the underside only get it to the point where it won't stick to the plates, then remove the paper. Total time: 2 hours, 40 minutes. At this point you can leave them for some time before continuing.

  6. Put the topping on, 20 minutes. Total time: 3 hours.

  7. Bake them from both sides for about 15 minutes. Total time: 3¼ hours.
