Despite the name, this ingredient is Straits Chinese in origin, one of the key ingredients in KL Hokkien Mee. Greaves are crispy cubes of rendered pork fat:

Ingredients

Pork fat, preferably from the back.

Preparation

Cut the fat into cubes round 7 mm on a side. Put in a pan in the oven at 140° until the fat has rendered and the greaves are crisp.
