This is intended to be a relatively typical German recipe for red cabbage with apple. Normally you can buy this stuff fully prepared, just needing warming up, and it's ready. In previous experience, I can't make it any better myself.

But then we accidentally bought some unprocessed red cabbage (just chopped and put in a sealed pack). So on 15 November 2016 I went looking and found this recipe, which I adapted:

Ingredients

quantity       ingredient       step
400 g       red cabbage, chopped       1
135 g       apple       1
130 g       onion       1
      goose fat       1
80 g       vinegar       2
10 g       sugar       2
2       cloves       2
2       bay leaves       2
10 g       salt (check!)       2

Preparation

  1. Peel the apple and onion and chop into small cubes. Fry gently in goose fat until the onion becomes glassy.
  2. Add other ingredients and bring to the boil. Simmer for 20 minutes. Serve.
