Preserved lemons are a Moroccan specialty. I made them on 25 June 2024. It's a bit of a stretch to call it a recipe. Cut ripe lemons crosswise for half their length:

Squeeze into a jar and cover in salt:

Put into a refrigerator and wait a month.
