Ingredients

quantity       ingredient       step
4       eggs (medium size)       1
40 g       bread crumbs or (better) soaked white bread       3
6 g       parsley       4
50 g       shallots or onion       4
500 g       mixed beef and pork mince       5
15 g       butter       5
20 g       Dijon mustard       5
10 g       salt       5
0.5 g       pepper       5
1 g       oregano (dried)       5
20 g       minced garlic       5

Preparation

  1. Boil three of the eggs for about 10 minutes. Allow to cool, peel.
  2. Pre-heat the oven to 200°C (or 180°C for convection)
  3. Soak bread in water, when soft, squeeze water out and chop if needed.
  4. Chop parsley, onion.
  5. Put all ingredients, including the remaining egg, into a bowl, mix thoroughly with both hands. Spread about one third of the mixture on an oven tray with baking paper. Make an oval shape. Sligthly press on it with your flat hands. Lay out the three hard boiled eggs lengthwise. Put the rest of the mixture on top, making sure to fill the gaps between the eggs. Apply melted butter with a baking brush, bake for about 40 minutes.

Serve with chips, boiled potatoes or carrots and peas.
