“Swine Bismarck” is pork fillet wrapped in spinach and puff pastry. The name is a play on the name Beef Wellington. And really, that's all there is to it. Unlike Beef Wellington, the fillet is browned in a frying pan before being wrapped, resulting in a baking time of round 30 minutes in a 190° oven.
