Heuvos rancheros means “ranch-style eggs”. This recipe lays no claim to originality: it's just what we eat.
Per person, place a good-sized tablespoon each of frijoles refritos, guacamole, chorizo and pico de gallo at the top of a plate and a couple of tortillas below. Fry some eggs and place on top of the tortillas. Sprinkle with chili flakes.
This dish has evolved. Here photos taken in 2008 and 2009, still with fake flour tortillas, in 2011 and 2012 with blue maize tortillas, and in 2020 with yellow maize tortillas:
