One of these days, when I get the better of TRANSFER and PSMAIL, I will get round to announcing it to the world. Unfortunately, I don't think there is much in the way of recipes for what you want. Yvonne tells me it's 15 minutes till dinner time, so I'll have to make this short. Fish: If you have fresh fish in summer, there's only one answer: barbeque. But first, buy ginger and garlic, chop finely, slit the fish diagonally on each side and put the ginger and garlic in the slits. I can't think of a better way to eat fish. Zucchini (that's the spelling): now this is MUCH more complicated. It's not too good on its own, but does very well in combination. How about a provencal Ratatouille? (Yvonne, being French, has to put in a French suggestion, but this one is good). I might give it in more detail some time, but I'm in a hurry now, so here goes: 3 lbs tomatoes 1 1/2 to 2 lbs aubergines 1 1/2 lbs zucchini 1/4 to 1/2 cup olive oil 12 ozs bell peppers, cut into 1 inch squares 2 1/2 cups chopped onions 1/2 cup chopped parsley 1 tablespoon basil leaves 2 (no, make it 4 or 5) teaspoons chopped garlic salt, pepper Cut the zucchini and aubergines into slices and cover all sides with salt. This will extract the moisture. After about 30 minutes, wipe off the salt and discard the juice. Then fry them fast (so they don't get too oily) in the olive oil. Dry on kitchen paper, then fry the other ingredients (onions should not get brown, just clear/yellow). Put the ingredients into a casserole in layers, salting and peppering between the layers. Bring to the boil and then cook at moderate heat, removing (but keeping) excess fluid every 7 to 8 minutes. After about 30 minutes, dish will be done, reduce the fluid to about 2 tbsps, and return to the casserole. Serve in the casserole with red snapper or similar. Cook zucchini in 2 cups of water until tender. Drain well. 2. Mix the remaining ingredients and add the zucchini. Mix. 3. Place in greased 1 1/2 qt. baking dish. 4. Bake at 350 degrees F. 40 - 45 minutes, until brown and puffy. 5. Cool a few minutes to allow casserole to get firm. 6. Slice into 2" squares and serve. Rinse and squeeze dry. Saute in pan for 8-10 minutes. This is the basis for several recipes: - add some grated parmesan, place in custard cups, make a hollow, add one (uncooked) egg in hollow and bake at 375 for 20 minutes or 'til done - add sauted onions and/or leeks and eat as is. #4 Make a cold soup. My favorite zucchini recipe is Baked Zucchini. I don't have a real recipe, but guessing at the proportions has worked ok for me. 1. Slice 3 or 4 zucchinis lengthwise in 1/4 or 1/2 inch strips. 2. Next, lightly fry the zucchini as follows: pour a beaten egg on one plate and about 1 cup of bread crumbs on a second plate. Pour enough oil into frying pan to cover the bottom with approximately 1/2 inch of oil. Heat oil, then roll each strip of zucchini in the egg, then roll in bread crumbs and and fry until each side is slightly browned or zucchini is tender. 3. in cassarole dish place a layer of zucchini on the bottom. Cover with your favorite spaghetti sauce (without meat), then sprinkle with grated mozarella cheese. Repeat layers until all zucchini is used. I usually use about 1/2 pound of mozarella and 1 1/2 to 2 cups of spaghetti sauce. Just take as many medium sized zuchini that you think you can eat or you want to get rid of and slice them LENGTHWISE about 1/4 inch thick. Shred on coarse side of grater or in food processor. In large skillet melt butter or margarine over medium-high heat. Add squash, salt and pepper. Cook, stiring, 5 minutes. Stir in chives. Serve. Brush zucchini with olive oil. Sprinkle with parmesan, salt, pepper and oregano. Top with mozarella. Grill or broil about 5 minutes. Makes 6 servings, 105 calories each. ---------------------------------------------------------------------- GRILLED ZUCCHINI WITH MINT 3 lbs zucchini, preferably small 3 tbs chopped mint 1 tbs salt 1 tbs minced garlic 5 tbs olive oil, divided 1/2 tsp pepper 3 tbs red wine vinegar Halve zucchini lengthwise. Sprinkle with salt. Drain in colander or let stand on paper towels for 30 minutes. Prepare grill or preheat broiler. Pat zucchini dry with paper towels. Brucsh lightly with 2 tbs olive oil. Grill 5 minutes per side. Transfer to a platter and immediately toss with vinegar, remaining 3 tbs oil, mint, garlic and pepper. Serve at room temperature.
