Copied By: LEHEY_GREG @ESSG SENT: 88-03-17 17:17 FROM: HAUPT_JIM @D100 TO: DL.COSIG @ESSG SUBJECT: COSIG MEATLESS MEATLOAF Easy to make.... and many of my meat eating friends say better than regular meatloaf! 11/2 cups of dry lentels. 16 oz shredded cheese (your favorite) 3/4 cup chopped onion 1 cup bread crumbs 3/4 cup chopped peppers 2 eggs 3/4 cup chopped celery favorite spices (thyme, pepper, etc.) 2 tablespoons cooking oil 2 tablespoons worchester sauce In medium pan simmer lentels for 20 minutes (until cooked). In large pot saute onion, peppers, celery in cooking oil. Add to large pot the cooked lentels (while still hot), cheese, bread crumbs, eggs, spices, worchester sauce - mix well Put mixture in greased bread pan and top with your usual meatloaf topping (catsup, taco sauce, etc) Bake at 350 degrees for one hour, or until top is dark brown and knife comes out clean.
