I have taken this from my most used curry cookbook (I have a lot of them) Tikka You can use this reccipe with Lobster, Turkey, Chichen or Lamb 11/2 lb (675g) meat Spices 8oz(225g)onion, coarsely 1/2 teaspoon black pepper,ground chopped 1 teaspoon white cummin,ground 3oz(75g)tomato puree 1/2 teaspoon ground ginger salt to taste 1/2 teaspoon mango powder 1/4 teaspoon red food colouring powder 1 Discard any fat. skin or shell, then cube the meat 2 Make a puree in the blender of the onion, tomato puree, salt and spices 3 Put the meat cubs into the puree and marinate overnight, or for a min 4 hurs 4 Put the meat onto skewers and cook over charcoal grill, Or cover the grill- pan rack with foil. then place the individual tikkas on the foil and grill at a medium heat. Cook both ways for about 10-15 minutes 5 Serve with a green sald. onion rings, lemon wedges, nan bread and chutney I have a recipe for masala somewear that I will send out later If you have never tryed an Indian meal befor you should try this !!!
