The resulting tabouli (wheat garden salad) should be primarily green with chunks of red tomatoes and white onions thoroughly interspersed with the wheat. dried coarse bulgher wheat fresh parsley green onions ripe tomatoes mint (optional, but try it!) lemon olive oil salt pepper 1. Put 2 handsful of the wheat into a large bowl and add warm water to 1 inch above wheat. Soak until soft (something like the consistency of al dente pasta); the wheat expands by several times. 2. Wash and trim off big stems from parsley (about 2 bunches per handful of wheat). Don't dry it. 3. By hand or food processor, chop parsley into small pieces (leaf-sized), culling stems when possible. Put parsley into a large bowl. 4. By hand, cut onions (1 bunch per 2 bunches parsley) and tomatoes (I use 3 large Roma per bunch per bunch of parsley) into small, but recognizable chunks. Dump into the bowl. 5. Chop a few sprigs of fresh mint and throw it in. When using dried mint (available at middle eastern stores, but be sure that's what you're getting, it's usually not labeled), put the mint between your palms and rub them back and forth to "grind" the mint into the parsley mixture, leaving the stems in your hands. Do this over the bowl. 6. Squeeze excess water from wheat (not all) and add to bowl. 7. Add fresh or bottled (generic brands are best--Real Lemon tastes like furniture polish!) lemon to taste. I use 2 big lemons for a large bowlful. 8. Add olive oil (in proportion to the lemon for a salad dressing), salt, and pepper. 9. Mix everything together. (If you used dried mint, let sit for 10 mins before serving.) Serve tabouli with romaine lettuce, cabbage, and pita bread triangles for scooping up the salad. This keeps for a couple of days, but not at my house--we usually gorge ourselves on the leftovers before the end of the night.
