Edie, I have a real simple recipe for porkchops that came from a Pork Council Advertisement. I suggest trying recipes from advertisers in magazines. They're usually easy (they want you to use their product) and frequently quite good (same reason). You may wish to set up a reply file if you get lots of recipes. Cheers. I like this fish because it doesn't smell fishy and is very tasty. Prepare one filet per diner: Orange roughy filets tomato slices(2 or 3 per filet depending on size) salt & pepper bell pepper slices (same comment as above) herb seasoning onion slices (same comment as above) garlic powder lemon and margerine Wash filets and pat dry. Arrange on plate or other flat surface and squeeze le mon (or lime) juice on both sides. Season with salt, pepper, garlic powder, & herb seasoning to taste, also on both sides. Put each filet on an individual sheet of aluminum foil (enough to totally and loosely wrap filet), put 2 or 3 dabs of margerine on filet then arrange bell pepper, tomato, and onion slices on tops of filets. Wrap foil loosely around each filet and seal completely. Arrange individual foil/filet packages on cookie sheet and bake in a pre-heated 350 degree oven for 45 minutes. Very tasty & healthy. (Orange Roughy can be purchased in most supermarket fish counters for any fresh fish market). I usually serve with new potatoes, pasta or rice, garlic bread, salad, and chardonnay. Enjoy.
