You watched the gauge and adjusted the heat to maintain the desired pressure. They were noiseless (no rocker on top hissing at you). The gauge told you when the pressure had gone down so that you could open the top. The amount of heat applied has to be monitored very carefully since it controls the pressure, which controls the temperature in the cooker, which greatly affects the cooking time. John
