I wrote to the state of California Ag. Dept. for an olive oil recipe. They sent one that first tells you NOT to do it, then gives the recipe. I would like some ideas! I have 20+ trees that are ready to pick. A couple of years ago I collected some recipies for olives and olive oils. There were huge variations in the recipies so I tried one at random. It was OK (soak olives in lye, then in a brine). The 5 gallons of olives I got are now gone so it is time to try again. I also made some oil (virgin oil no less). It was supposed to sit and age for 6 months. At first it was kind of bitter but after a couple of months it changed a lot.
