I have excelled in all Italian cooking and people have enjoyed the few times I served meatballs, but I wasn't satisfied. I have now met the challenge and conquered it. Jeff Smith (THE FRUGAL GOURMET) gave me the idea on his PBS show. What follows has not been name. I would like to hear some suggestions as to a name: INGREDIENTS: 1 lb. ground veal 1/2 lb. ground beef 1 egg 1/4 cup grated Roman cheese 1/4 cup chopped fresh parsley 1 tsp orageno 1 small eggplant 1 cup olive oil PREPARATION: Quarter egglpant and bake in a 350 oven for one hour. Peel eggplant and puree with one egg in blender or food processor. Do not remove seeds. Mix all ingredients except oil and form 1 inch meatballs. If too moist a few bread crumbs could be added. SOUTZOUKAKIA (Meat balls with tomato sauce) 1 lb minced beef 2 slices moistened stale bread 1 sliver of garlic (chopped) 1 Tbsp ground cumin salt pepper oil for frying 1/2 C flour 1 can (1 lb) tomato juice 3 Tbsp oil salt pepper sugar Mix minced meat, bread, garlic, cumin, salt, pepper and prepare meat balls. Roll lightly in flour and fry in hot oil. Prepare tomatoe sauce with tomato juice, oil, salt, sugar and pepper. Put the fried meat balls in a baking pan and the tomatoe sauce over them and bake for 30 minutes.
