The California Macadamia Society (P.O. Box 1290, Fallbrook, CA 92028) publishes a newsletter ($US 17.50 a year) that tells all about growing, roasting, hulling, and cracking macs. Basic tips: hull them as soon as they fall off the tree. In a shallow pan, put in a single layer and let dry in a warm place away from the sun for 2 weeks.
