Have lemons, need recipes! John, I assume that you are in the SF area and have access to those wonderful (and relatively inexpensive - compared to the east coast) prawns. If so, I have the following recipe for you. 1 lb. jumbo (10-12 count) prawns 1 cup all purpose unbleached flour 1 teaspoon white pepper 1 teaspoon paprika 1 stick (4 oz.) unsalted butter 3 cloves garlic (minced) 2/3 cup white wine 2 lemons (juiced) 2 teaspoons basil 1/2 cup parmesan cheese (freshly grated only!!) Melt butter in large skillet over medium heat. Mix flour with pepper and paprika. Coat prawns with flour mixture and saute in hot butter for about 30 seconds on each side (do not overcook). remove prawns from skillet and add garlic, wine, lemon juice, and basil. Stir mixture until thickened (should be about 30 seconds). Return prawns to skillet and stir to coat with mixture. Turn off heat, sprinkle parmesan cheese over prawns and cover skillet. Let skillet sit off-heat, covered, for about 2 or 3 minutes. Enjoy! NOTE: This dish goes well with cooked egg noodles. Have lemons, need recipes! number 1. should be subject "3: HELP ! have lemons, need recipes!" otherwise all us TEMAIL users get this as first-class mail. now - LEMON CURD or LEMON BUTTER - uses lots of lemons FAST 1lb sugar 1/4 lb butter 6 eggs, beaten 3 lemons, rind and juice cook in double boiler - sorry that's the entire recipe - Use it as a spread on bread and butter, or as a split filling in sponge cake - keeps reasonably well. also - just freeze the things whole. they're easier to juice later. also easier to grate the rind when they're frozen. the above recipe was my grandmother's - rind means grated rind. it's a powerful tasting "pudding" - makes great filling for those tiny tart shells made with short pastry. next recipe in her collection orange cream (never tried it, just found it) 2 oranges, rind and juice 2 lemons, juice only 3/4 cup sugar 3 eggs, separated put juice and rind and half sugar in double boiler to heat. beat egg yolks with other half sugar and add to hot liquid. cook until thick and fold in whites presumably you are supposed to realize that the whites are to be beaten into at least soft peaks. sounds good. maybe i'll try it later when lemons are cheap. See COSIG cookbook for my lemon delicious pudding Also if they are thin-skinned then cut into quarters but not all the way through so they open out , put them into a glass container with an airtight lid , protected if metal screw top, fill the container about quarter full of salt around the lemons, seal and leave in the sun until the salt becomes a gooey brown liquid and the lemons look sort of brown and slimey . This is then an excellent pickle to serve straight or add to cooking . Similarly just dry the lemons in the sun until small and hard, then use them sparingly cut in quarters or slices in soups , stews etc . The last two items are from my wife's Armenian/Iranian family. John - We've got a lemon tree and I've been overloaded at times too. I usually squeeze an ice-cube tray full and freeze it. Then just pop them out and store in the freezer. Whenever a recipe calls for lemon juice, you've got it. I do almost the same thing with parsely. I can never use the whole bunch in a few days, so I chop it up in tiny pieces and freeze it in a ziplock bag or Tupperware. When a recipe calls for parsley, I've got it! Much better than those dried parsley flakes. John, My mother serves this wonderful mousse for dessert (a recipe from Chef Tell Erhardt): LEMON MOUSSE 1/2 cup of lemon juice 2 tsps lemon rind 1/2 cup of sugar 2 cups of whipped cream 4 egg yolks, beaten Heat the sugar, lemon juice, lemon rind and egg yolks in a saucepan. Frozen Zing: 1 measure of vodka The same amount of fresh lemon juice Crushed ice The above should be put in a mixer and mixed slowly. 2. 1 measure of triple sec 1 measure of dry vermouth 1 measure of fresh lemon juice This should be shaken in a cocktail shaker with some ice. 3.
