Add boiling water. Stir till desolved. Cool. Add cognac and vanilla bean. Bottle and let sit at least 3 weeks. Here's a kahlua recipe we've been using successfully for at least the last 10 years: 1.5 c. water 1.5 c. dark brown sugar 1 c. granulated sugar 0.5 c. boiling water 0.5 c. best-quality freeze-dried coffee 1 shot (~1 oz) dark rum 3 c. good-quality 100-proof vodka 1 whole vanilla bean Combine the 1.5 cups water with both sugars in a saucepan and bring to a boil to dissolve the sugars. Add the 0.5 c of boiling water and the freeze-dried coffee to the syrup. Boil for 5 minutes, take from heat. When cooled, pour into a large glass jar (with a lid) and add the rum, vodka, and the vanilla bean. Screw on the jar top and let the liquid sit for at least a month in a cool place. We find the longer it sits, the smoother and richer (vanilla-y) it gets. And unlike other recipes, we don't take out the vanilla bean. We *like* that taste! This makes a wonderful Christmas gift. Let mixture cool, then add the following ingredients: 2 to 3 teaspoons of vanilla extract A bottle of Vodka (4/5) Let stand 10 days before use. For TIA MARIA, same as above but use RUM Note: if you use 190 proof alcohol, use 1/2 alcohol and 1/2 water. CREME DE MENTHE (one quart) 8 ounces of alcohol or 20 ounces of Vodka 1 teaspoon of pure essence or extract of peppermint 1 Tablespoon of green food coloring or an amount to suit you. 1/2 cup of honey boiled in water to form a heavy syrup (let the honey syrup cool before adding any of the other ingredients or they will evaporate) Fill balance of the quart with water. This will automatically compensate for the differences of alcohol and vodka. DRAMBUIE you can purchase at the wine making specialty stores an extract called Honey Smoke. To this add about 3/4 cups of light colored honey to suit your taste and a bottle of scotch. AMARETTA 2 quarts vodka 1/5 apricot brandy 4 ounces almond extract 6 cups sugar 4 cups water Heat sugar and water to make a syrup. Let cool Mix the rest of the ingredients. GRAND MARNIER 1/5 cheap brandy 2 cups white sugar 1 orange cut in half and scored Place in a wide mouth jar. JAR ANTIQUA INSTANT COFFEE (AT MACY'S OR COST PLUS) 4 CUPS SUGAR 2 CUPS BOILING WATER 2 CUPS VODKA, OR BRANDY 1 VANILLA BEAN Mix coffe & sugar, pour in boiling water. Dissolve well. Pour 1 cup vodka, or brandy in one bottle with 1/2 of vanilla bean. Pour other 1/2 in another bottle. Pour 1/2 of coffee mixture into each bottle. Set for one month, then enjoy! Kahlua Recipe from my husband: 4 cups of hot water 4 cups of sugar Disolve in the Water 2 oz. of instant coffee Fifth of whiskey 1 vanilla bean Mix all together. My husband usually puts it in a bottle. Then let is stand for at least one month. Good Luck, Linda
