Hi Mary One recipe that's easy, although it's not vegetarian, is this: Into a casserole dish -- I put 1 C. long grain rice, 2 C. liquid (water with wine or milk or beer or chicken stock), seasonings, and chicken (breasts, legs, etc.) on top. Cover the pan and cook it in an oven for about 45 min. at 350 degrees. Note: Often I add some vegetables in with the rice mixture; ie: onions, broccoli or mushrooms -- it then becomes a meal in one. SUMMER SPAGHETTI 2 lbs ripe tomatoes (try to get vine-ripened ones; the flavor here is imperative!) 1-2 cloves garlic 1 medium onion (sweet red ones are nice) 1 Tbsp each (more or less to taste) chopped fresh basil and parsley a 1:3 mix of tarragon vinegar and olive oil Hot cooked spaghetti Freshly grated parmesan Procedure: Chop tomatoes and onions, mince garlic and herbs very fine, add oil/vinegar mix, and salt if you want, until a nice saucy consistency is reached. Pour over hot cooked spaghetti and top with a generous amount of freshly grated parmesan (the boxed stuff just won't do for this recipe!). NOTE: This is even better the next day, when the pasta has absorbed the flavors of the sauce. They give you the recipes for those packages you pick up in the store for spaghetti sauce or tacos or chili or whatever(there are quite a few). The really nice thing is that you can make the packets ahead of time and customize them to your own tastes. We love them because we both work and like you don't feel like spending the night in the kitchen after a hard day at the office. Ingredients : a couple of fish fillets water or white wine fresh vegetables (optional) Directions : pour about an 1/8 inch of white wine or water into a pan that has a lid. Bring the water to a boil. Place the fillets into the pan and cover. Let cook for 3 to 5 minutes. Thinner fillets 3 minutes and thick fillets 5 Min. Thick is considered 1/2 inch or thicker. Add fresh vegy's on top of the fillets and you have a godd meal with no grease! Here's one you may not have: 1 or 2 cans Pillsbury Biscuits (I use flaky Buttermilk) 1 or 2 pkg. Brown and Serve Sausage Chedder Cheese (thin strips or grated Take biscuits out of pkg. and flatten out to 2 x 3 in. squares Cut a slit in sausage and fill with cheese Place sausage on square pulling long sides over sausage ends Roll remaining ends together and pinch to seal Place seam side down on cookie sheet (ungreased) Bake at 450 degrees for about 10 min. or until golden brown What to serve with them is your choice. Obviously, amount of ingredients depends on how many you want to make. My little boy and I both love these. (You can also store in refrigerator for quick snack or breakfast). Simple but yummy!! Simple things but good are: Sauteed veal cutlets with butter shallots and lemon juice. Rice or veggies round this out. Sauteed vegetables like eggplant (don't need to soak out the water with salt), zucchini, onions and whatever. Stewed chicken with soup veggies takes about 3/4 hour and is real quick to prepare. Cut up da bird, toss water in a pot, add onions, salt, pepper and soup greens. Broiled fillets or steaks of fresh fish. 15 minutes max til done. The list is endless. One of my favorites: Quesadillas Whole wheat tortillas Mild cheddar Canned chopped chiles Slap a tortilla in a nonstick frypan. You don't even need any oil. Sprinkle with small pieces of cheese & chiles. Top with second tortilla. Heat until cheese melts & quesadilla is a little crisp, doesn't take long at all. Flip once during cooking. Cut in pie shaped pieces. One person will usually want two of these. Serve with salad, or if you're like me & even that's beyond you at this point, just slice a tomato. (This has gone over great with guests. For guests I add chopped chicken, set out some salsa, etc., but let's not get complicated here! Mary- There is a paperback put out by HP Books ("Make-A-Mix Cookery", I believe is the title) that has many tasty, nutritious meals you can prepare in "no time" with mixes "you" make ahead of time from items you would have in your pantry and/or fresh veggies you have on hand. Some items are frozen, some stored in dry form. You control the ingredients, varying their recipes for taste and dietary restrictions. I've made some and they are good. Also, don't forget making extra to freeze so meals can be nuked or boiled (invest in those plastic bag food sealer contraptions!) in minutes! This may not be possible in the US, but something similar probably is. Equipment: electric deep fryer Ingredients: Chicken cordon bleu for me, breaded fillets of plaice for Yvonne, chips (called french fried potatoes in some places) for both. All deep frozen. Method: Turn the deep fryer on, throw in the cordon bleus first (still deep frozen), cook until medium brown. Remove the basket, let the fat heat up again, and then add plaice, chips and (after the foam has died down) the cordon bleus. Cook until ready. Time: Preparation: 30 seconds Cooking: 5 - 10 minutes. Add to this a sauce aioli (must be in the COSIG recipes somewhere) and you not only have a meal, you also keep people out of your office the next day. (or more) pre-grated cheese or dry cottage cheese flour (a tbsp. or two) cooked vegetables (optional) cooked ham or chicken or fish (optional) pepper and/or nutmeg Directions: Thaw the pie crust. Dust the bottom of the crust with some flour. Open the bag of cheese and add enough flour to dust the cheese with flour. Shake the bag so that the flour coats the cheese. Add half of the cheese into the pie shell. Add chopped green onions. Add cooked meat or cooked vegetables (ie: broccoli, mushrooms, califlower, or spinach). Dust any veggies with some flour. Add the rest of the cheese. Mix milk and eggs and pour over the top and put pie in pre-heated oven. Bake at 375 degrees until pie is lightly browned (about 1 hr.) Note: You don't have to flour the ingredients, however, it prevents you from having a watery quiche. Another note: if you have all the ingredients, this takes about 5 min. to prepare. Serve as is or over rice. Stew meat is a great substitute for the ground beef. I've also added other vegies at times (like celery, zucchini, etc.). And I've even used soy sauce instead of teriyaki. Add liver slices and brown (only 2-3 minutes) Add soup and extra stock (milk) Stir in to make smooth. Add the mushrooms. Simmer for 1-2 minutes. Liver should not be cooked for longer than 5 minutes or so to keep it tender and succulent. Sometimes I quickly brown the liver in a separate pan before adding to the other ingredients. Serve with Boiled New potatoes in their jackets and your favourite vegetable. ---------------------------------------------------------- Another quick dish is Tuna Pasta (2people) Small Onion -finely chopped Clove of Garlic - " " Can Tuna in Oil 2-3 oz grated cheese 4oz chopped mushrooms level tablespoon flour 1/2 pint milk 6 nests Tagliatelle. This is so quick first thing to do is put large saucepan of water on, to bring to the boil for the tagliatelle. When water nearly boiling, start the following:- Fry onions & Garlic in little oil. ----- (ABOUT NOW THE WATER when softened spinkle over with the flour (SHOULD BE BOILING stir and cook for 1 minute. (SO TOSS IN THE slowly add the cold milk stirring continuously (TAGLIATELLE) to make smooth sauce (over gentle heat) when gently bubbling, stir in the tuna (minus oil), mushrooms, add salt and Black pepper to your taste and lastly the cheese, bring back to the simmer and cook for one minute. I sometimes add a couple of handfuls of frozen peas to the sauce. Serve with salad. Cook the noodles. Warm the soup, onions and garlic in a saucepan until the soup is kind of creamy. Place the noodles in a baking dish, cover with chicken/turkey, pour soup on top and cover with grated chedder cheese. Bake at 350 in oven for approximately 15 minutes or until it is heated all the way through and the cheese is melted. Goes great with salad and garlic bread! In a fairly large casserole, arrange a layer of shredded cabbage seasoned with salt and pepper, then a layer of chopped apples and onions with a sprikling of garlic, spices and sugar. Continue with these alternate layers until everything is in. Now pour in the wine vinegar, add a knob of butter, put a lid on the casserole and let it cook very slowly in the oven for about 2 1/2 to 3 hours, stirring everything around once or twice during the cooking. Red cabbage,once cooked,will keep warm without coming to any harm. It will also re-heat very successfully - so it can be made in advance if necessary. Either pan fry or broil. It's great with a side of cubed avocado, tomato and red onion with a little lime juice squeezed over. Mediterrean style frozen vegetables 6 oz. lemon juice 2 Tbsp sesame oil 1/8 tsp salt 1/8 tsp pepper Remove skin and cube chicken breasts. Marinate for one hour in lemon juice, salt and pepper. Drain chicken breast and quick fry in 2 Tbsp sesame oil until fork tender. Remove chicken to separate dish. Quick fry vegetables 3-4 minutes. Add chicken breast to vegetables and continue to heat for about 1 minute. Season to taste. (I added some Indonesian soy sauce to it, but if you don't have that in the house, you can add regular soy sauce). Serves 4 - 6
