DL.COSIG @ESSG SUBJECT: Great Cheesecake Cupcakes This is traditional moist cheesecake in cupcake form. Served in foil liners, they are very elegant on a tray decorated with fresh mint leaves. To serve a crowd, many people can each make a double recipe and pool their production without anyone noticing, because the result looks the same: smooth on top. And it's easy to make, too. 1/2 c. graham cracker crumbs (or use 3 to 3-1/2 crackers broken up in a plastic bag with a rolling pin) 3 T. melted margarine 6 foil muffin liners 8 oz. cream cheese, at room temperature 1/4 c. sugar 1 egg 1 tsp. vanilla Mix graham cracker crumbs and melted margarine in small bowl. Line 6 muffin cups with foil liners. Spoon crumbs equally into each cup, then press with spoon over bottom and up sides. Beat until smooth the rest of the ingredients. Spoon equally into the crumb-lined cups. Bake 375 degrees for 10 minutes. Chill uncovered for at least 1 hour. Cover and keep chilled to serve later. At serving time, spoon 1 tsp jam onto each tart. I know the blasted thing will show up someday, but in the meantime: PUDDING CAKE Preheat oven to 250 1 package cake mix (will use white) 1 package instant pudding (will use pistachio) 3/4 cup vegetable oil 1 cup milk 4 large eggs Mix ingredients, adding one egg at a time, until well blended. Pour into ungreased Bundt or angel food cake pan (I will try cupcakes, but I don't know how they will turn out with this recipe). Raise oven temp. to 350, and bake one hour for cake. Will have to watch carefully for cupcakes! This makes a very rich, pound-like cake. I have made it with chocolate cake mix and pudding, and lemon, and vanilla pudding with various other cake flavors. I will either make this and just add the mini chocolate chips, or make plain white cake and add the chips and green food coloring - that will make a lighter batter for cupcakes.
