For all you chocolate-a-holics, here's another recipe for the books: "Hippo Pot de Mousse" Ingredients: 16 lbs Bitter Chocolate 2 lbs White Sugar 2 lbs Brown Sugar 1/2 Cup Vanilla Extract 11 Gallons Heavy Cream Directions: In a LARGE pan, melt chocolate over boiling water. Add sugar and vanilla. Continue cooking until sugar is dissolved (about 3 days). Set aside to cool. Pour cream into a well-scrobbed kitchen sink. Using a small jacuzzi pump, whip the cream until stiff peaks form. When you have recovered, fold the chocolate mixture into the cream. Shovel into serving bowls. Serves 3. Happy Pigging!!!!! It pays to use good Belgium chocolate. Hersheys and Nestles, for example, sieze up. In fact they never get as thin as good chocolate, no matter how hot you get them. So by themselves they don't dip very well. Good chocolate is much thinner and goes further. The idea of eating parafin (a petroleum product) has always bothered me. With good chocolate you don't need it. CHOCOLATE CHIP PUMPKIN BARS 1 Cup All Purpose Flour 4 Eggs 1 Cup Wheat Flour 1-1/2 Cups Sugar 2 Tsp. Baking Powder 1/2 Cup Firmly packed Brown Sugar 1 Tsp. Baking Soda 16 oz. Can Cooked mashed Pumpkin 1/2 Tsp. Salt 1 Cup Oil 1 Tsp. Cinnamon 1 Cup Chocolate Chips 1/2 Tsp. Nutmeg Powdered Surgar (If desired) 1/2 Tsp. Allspice Heat oven to 350 degree F. Using solid shortening, grease and flour 15 x 10" jelly roll pan. Lightly spoon flour into measuring cup; level off. In medium bowl, combine all purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice. In large bowl, beat eggs; add sugar, brown sugar, pumpkin and oil; beat until blended and smooth. Add flour mixture and mix thoroughly. Stir in chocolate chips. Pour into prepared pan. Bake at 350 degree F. for 25 to 35 minutes or until toothpick inserted in center comes out clean. Cool, sprinkle with powdered sugar.
