FROM: HERBERT_BRANDY @CASG SLUMGULLION \POFF 6 1 - 2 lbs hamburger 1 medium onion, chopped 1 lg. can tomatoes 2 Tbsp. flour Spaghetti Sauce seasoning (optional) Bacon drippings, if available (butter/margarine will do) In a large skillet, saute the chopped onion in the bacon drippings until the onion starts to turn transparent. Add the hamburger and as it cooks "meal" it with the edge of a spatula until it is all broken up and real fine. As soon as it gets thoroughly browned, pour off the water & grease. Add the can of tomatoes, cutting them up as you add them. (You can add the Spaghetti Sauce seasoning, or anything that sounds good to you, at this point..) Add the 2 Tbsp. flour to thicken, turn the heat down and let it simmer for about 10-15 minutes. Serve over mashed potatoes or rice (or even toast). Well, the easiest thing that I know to do with hamburger that still tastes good is to break up and brown about 1/4 - 1/2 pound, add a can of Campbell's alphabet soup, heat, and eat. Takes all of about 5 minutes! You can vary it by adding a little catsup or bottled spaghetti sauce or cayenne pepper or whatever. Grill over hot charcoal about 5 minutes per side, or less if you like 'em rare. Doing anything else with good hamburger is nothing short of sacrilege! Ground beef is another story entirely... Ingredients: 1 LB hamburger 1 egg 1 half of an onion (diced) OR can substitute for 1 pkg.Lipton's onion soup mix 1 or 2 tblsp. barbecue sauce 1/4 cup of wheat germ 1 crushed galic clove _____________________________________________________________________________ MIX MIX MIX MIX MIX MIX MIX MIX MIX MIX MIX ----------------------------------------------------------------------------- Mix hamburger with egg in mixing bowl. Add diced onions, BBQ sauce then wheat germ. Squeeze in garlic clove. Mix this whole mixture together and form into flat round patties. (makes about four healthy patties). But with an interesting flavor because of the ingredients AND the fact that you don't measure anything. Mix these things together (with hands) in amounts you believe you'll like: 1+ lb. hamburger 1 raw egg Chopped onions, celery, & Taco sauce (red, with zip if you like it) green pepper Teriyaki sauce If it gets too soupy for you, smash some soda crackers (NOT bread) and mix them in. Bake at 350 for about 50 minutes (for well-done meatloaf). Even meatloaf haters like this one! Makes great sandwiches, too. One more: Cabbage Surprise (serves about 4 cause it's addictive)... Ingredients: 1+ lb hamburger, crumbled (or stew meat) 1 large head of cabbage, chunk-chopped 1 med. onion, sliced Soy sauce (or Teriyaki sauce if you prefer) Brown burger in large kettle (diced celery & onions optional); drain. Mix in cabbage, sliced onions, soy/teriyaki sauce (1/2 to 1 cup), & pepper (to taste). Cover kettle and steam (low heat) for 5 to 10 minutes--until cabbage is the consistency you like. Serve over steamed rice. (Original recipe called for stew meat, but hamburger works very well. This stuff is great as leftovers, too.) WE USE IT IN SPAGHETTI, CHILI, AND EVEN HAMBURGERS. IT HAS LESS FAT THAN GROUND BEEF (WE'RE TRYING TO QUIT), AND COSTS MUCH LESS ($.99/LB.) FOR A RATHER GOOD QUALITY MEAT.
