Save wing tips for a later use or discard. The traditional method calls for deep frying until done. I prefer to place them on a broiler pan and bake at 400 degrees for about 15 minutes. Drain the wings on paper towles. Melt the butter over medium heat until it bubbles. Add the hot sauce and mix well. Add the chicken wings and toss until well coated. Place a bowl of blue cheese dressing in the center of a serving platter and arrange the chicken wings and celery on a bed of romaine leaves around the bowl. Dip the wings and celery in the dressing. Use the romaine leaves too! Hint.. I use unsalted butter. The hot sauce is very salty. I suppose you could use unsalted margarine if you can find it. I will give you my brother's recipe. There is no precise measurements in the recipe, you must practice. First, you need a paper bag, medium. In the paper bag put in flour, pepper, garlic powder, Old Bay seasining, crushed hot peppers, and any other spice you like. Throw in a dozen or so wings and shake until coated. Drop immediately into hot oil and cook until brown. Do not over cook. For the "red sauce" mix up some ketchup, tabasco sauce, a little mustard, and red wine (optional, usually not used). After you have cooked all of the wings, you can eat them two ways: First, just dip the wings into the sauce and Blue cheese and eat them, or pour the "redsauce" over the wings and put them under the broiler for a minute or two. This will make them sticky and a little crunchy. Always dip the "sauced wings" into blue cheese before eating. Bon apetit. If this is not to your tasting, do what I do and go to Stew Leonards and but Jamaica wings. If you have fears about a ground meat's dryness, try wraping the burger in bacon before cooking. That's how I cook lamb patties on a grill (it works for ground turkey too). For burger use (or any use of dry ground meat) including beef suet in the ground meat works very well. The flavor isn't altered much and the beef suet adds the juices you need. Works well with deer (another particularly lean wild game), buffalo and probably horse meat, if you happen to be into that. I know it works with dog meat, which is especially lean and tough otherwise (hey, it was Korea and any kind of meat was eaten).
